Preparation Instructions:
Step 1
Thaw avocado according to package instructions.
Step 2
Preheat fryer to 350˚F.
Step 3
Combine the olive oil, cornstarch, seasoning and cilantro in a large bowl, stir to incorporate. Add the chicken, cheese and Fiesta blend, toss to coat. Add the avocado to the filling mix and toss lightly.
Step 4
For each roll; place two #30 scoops or 3 1/2 oz. of filling in the corner of a spring roll wrapper at an angle. Fold the corner over the filling and begin rolling, fold in both sides to seal ends. Wet the finishing corner with water or egg wash to seal and roll tightly. Cover the finished rolls with a damp towel to prevent drying and cracking.
Step 5
For each serving; fry 2 rolls per basket in fryer for 2 minutes or until golden brown and the filling is hot. Serve with 2 oz. pico de gallo or salsa on the side.
