This colorful salad is fast and easy to make. Don't let the short ingredient list fool you, it's loaded with flavor.

Simplot Harvest Fresh™ Avocados: Diced Avocado, Frozen 12/2lb 20 oz.
Simplot RoastWorks®: Flame-Roasted Corn and Black Bean Fiesta Blend 6/2.5lb 40 oz. 1 bag
Romaine lettuce, chopped 15 oz.
Cheddar cheese, sharp, shredded 5 oz.
Tortilla strips, crispy 2.5 oz.
Ranch dressing, prepared 20 fl. oz.
Preparation Instructions:
Step 1
Thaw avocado according to package instructions.
Step 2
Prepare Fiesta blend according to package instructions. Chill.
Step 3
For each portion, place 1-1/2 oz. lettuce into a serving bowl. Top with 4 oz. Fiesta blend, 2 oz. avocadoes, 1/2 oz. cheddar cheese and 1/4 oz. tortilla strips. Serve with 2 fl. oz. Ranch dressing.
