A perfect crostini lunch featuring Harvest Fresh™ Avocado Dices. Remove the flank steak and serve as an appetizer or veggie entrée option.

Ingredient Weight Measure
Simplot Harvest Fresh™ Avocados: Diced Avocado, Frozen 12/2lb 10 oz.
Simplot RoastWorks®: Flame-Roasted Corn and Black Bean Fiesta Blend 6/2.5lb 10 oz.
Flank steak 2 lb.
Garlic 1 Tbsp.
Salt & pepper to taste
Scallions, minced 2 count
Tomato, diced 4 oz.
Garlic, minced 1 tsp.
Cumin 1 tsp.
French bread, thin slices, toasted 24 count
Preparation Instructions:
Step 1
Thaw avocado according to package instructions and hold. Prepare the corn and black bean blend according to the package instructions and cool.
Step 2
Season steak with garlic, salt and pepper.
Step 3
On a preheated grill, cook steak over medium heat for 10-15 minutes, or until desired doneness. Let stand for 5 minutes and thinly slice.
Step 4
In a medium bowl, combine corn and black bean blend, thawed avocados, scallions, tomato, minced garlic, cumin, salt and pepper.
Step 5
Scoop 1 oz. vegetable mixture onto each toasted bread crostini. Top with 1 oz. sliced steak.
