How about a fajita dish with all the traditional flavors you'd expect, but without all the chopping, and sautéing? Students will love this assemble-your-own lunch, complete with salsa, sour cream, and guacamole.

Preparation Instructions:
Step 1
The day before service, thaw guacamole cups, corn and black bean fiesta blend, and peppers and onions under refrigeration overnight.
Step 2
Heat tilt skillet to medium-high. Add oil. Once oil is shimmering, add corn and black bean fiesta blend, and peppers and onions. Cook for 5-6 minutes, stirring often.
Step 3
Remove from heat, add lime juice, and stir.
Step 4
For service, top each tortilla with a #8 scoop (1/2 cup) veggie mixture (2 tortillas per customer). Serve 1.25 oz. of cheese and a guacamole cup on the side. Offer 1 oz. salsa and a #30 scoop sour cream (2 Tbsp.) as additional condiments.
