A hearty fun breakfast, featuring Harvest Fresh Avocado Dices.

Ingredient Weight Measure
Asparagus Spears, Blanched & Bias-SLiced 16 count
Butter 2 Tbsp.
Eggs, Large 8 count
Salt & Pepper (To Taste) 1 pinch
Simplot Harvest Fresh™ Avocados: Diced Avocado, Frozen 12/2lb 1 cup
Tomato, Diced 1 count
Whole Wheat Bread, Sliced 8 count
Preparation Instructions:
• Pre-heat a large skillet.
• Using a small biscuit cutter, cut and remove centers from bread slices; butter slices on one side only. Grill until slightly toasted.
• Crack an egg into each bread hole, careful not to break yolk. Season with salt and pepper and cook until eggs are desired consistency.
• In a medium bowl, combine remaining ingredients; add salt and pepper to taste. Spoon 2 heaping Tbsp of mixture over each slice of bread.
