Salad greens 20 oz.
Black beans, drained 40 oz.
Red bell pepper, fresh, diced 20 oz.
Lime wedges 10 each
Cilantro sprigs 10 each
Preparation Instructions:
Step 1
Thaw mango and avocado according to package instructions. Hold separately.
Step 2
Prepare red quinoa according to instructions. Chill.
Step 3
For each portion; place 1 oz. salad greens into a serving dish. In a decorative arrangement, top with 2 oz. mango cubes, 2 oz. black beans, 2 oz. quinoa, 2 oz. diced avocado, and 1 oz. diced red pepper. Garnish with a wedge of lime and a sprig of cilantro.
