The "nutty" and hearty texture of this spread lends itself to more than just a sandwich spread. Scoop some on a toasted bagel and top with sliced ham for a different brunch item, or use it as a dip with tortilla chips and veggies.

Simplot Simple Goodness™: Shelled Edamame 6/2.5lb 12 oz.
Simplot Harvest Fresh™ Avocados: Diced Avocado, Frozen 12/2lb 3 oz.
Salt 1 tsp.
Cream cheese, softened 8 oz.
Garlic powder 1/2 tsp.
Sun-dried tomatoes (rehydrated if necessary), chopped 1 oz.
Paprika 1/4 tsp.
Salt and freshly ground black pepper to taste
Preparation Instructions:
Step 1
Thaw avocado according to package instructions.
Step 2
Prepare edamame according to package instructions.
Step 3
Place edamame, cream cheese, 1 tsp. of salt, garlic powder, and paprika in bowl of food processor. Process until edamame is chopped and mixture is combined, about 1 minute (mixture will be rough-textured, not smooth).
Step 4
Remove mixture to a medium bowl. Stir in avocado dices and sun-dried tomatoes. Season as needed with salt and freshly ground black pepper. Cover and refrigerate until ready for use.
