A delightfully refreshing and hearty vegetarian salad featuring Harvest Fresh Avocado Dices and Simplot UpSides Pearl Couscous and Red Grains.

Ingredients:
8 oz Baby kale
6 oz Carrots, shredded
4 oz Dried cranberries
12 fl oz Lemon vinaigrette
8 oz Parmesan cheese, shredded
40 oz Simplot Good Grains™: Couscous, Red Quinoa and Vegetable Blend 6/2.5lb
10 oz Simplot Harvest Fresh™ Avocados: Diced Avocado, Frozen 12/2lb
Preparation Instructions:
• Thaw avocado according to package instructions.
• Heat the couscous blend according to package instructions. Chill.
• In a large bowl, mix the chilled couscous blend, avocado, kale, Parmesan, carrots and cranberries. Drizzle with vinaigrette and gently mix the dressing into couscous blend.
