A delightfully refreshing and hearty vegetarian salad featuring Harvest Fresh™ Avocado Dices and Simplot Good Grains™ Couscous, Red Quinoa and Vegetable Blend.

Ingredient Weight Measure
Simplot Harvest Fresh™ Avocados: Diced Avocado, Frozen 12/2lb 10 oz.
Simplot Good Grains™: Couscous, Red Quinoa and Vegetable Blend 6/2.5lb 40 oz.
Parmesan cheese, shredded 8 oz.
Baby kale 8 oz.
Carrots, shredded 6 oz.
Dried cranberries 4 oz.
Lemon vinaigrette 12 fl. oz.
Preparation Instructions:
Step 1
Thaw avocado according to package instructions.
Step 2
Heat the couscous blend according to package instructions. Chill.
Step 3
In a large bowl, mix the chilled couscous blend, avocado, kale, Parmesan, carrots and cranberries. Drizzle with vinaigrette and gently mix the dressing into couscous blend.
