Take a traditional Mojito “next-level” by adding creamy avocado to the mix. Muddle some fresh mint and top it off with lime sparkling water. Your patrons are going to love this non-alcoholic option.

Simplot Harvest Fresh™ Avocados: Diced Avocado, Frozen 12/2lb 4 oz.
Simplot Harvest Fresh™ Avocados: Chunky Avocado Pulp, Fresh 8/2lb 3 1/4 oz. 1/2 cup
Agave syrup 4 fl. oz. 1/2 cup
Lime juice, freshly squeezed 4 fl. oz. 1/2 cup
Lime sparkling water 24 fl. oz. 2 cans
Mint leaves, fresh 1 cup
Rum, white, spiritless, non-alcoholic 8 fl. oz. 1 cup
Preparation Instructions:
Step 1
Thaw diced avocado and pulp according to package instructions.
Step 2
Purée avocado pulp and agave syrup in a blender until smooth. Transfer to a container, cover and refrigerate.
Step 3
For each serving; place 1 oz. diced avocados and 1/4 cup mint leaves into a mojito glass. Lightly muddle to extract mint flavor and mash diced avocado. Add ice cubes to the top, 2 oz. avocado-agave syrup and 1 fl. oz. lime juice, top with 6 fl. oz. lime sparkling water. Add stir stick and serve.
