Thai Coconut-Miso Grain Salad

A hearty grain and vegetable salad tossed with a flavor-packed coconut-miso dressing. Perfect for grab-n-go or takeout!

Simplot Simple Goodness™: Broccoli Florets, IQF 12/2lb 16 oz.
Coconut cream 4 fl. oz. 1/2 cup
Mirin 2 fl. oz. 1/4 cup
Tahini 2 fl. oz.
White miso 2 oz. 3 Tbsp.
Sesame oil, toasted 2 Tbsp.
Gochujang red chile paste 1 Tbsp.
Red pepper flakes, crushed 1 tsp.
Kosher salt 1 tsp.
Green onions, bias sliced 2.3 oz. 1 cup
Coconut chips, toasted, unsweetened 1.2 oz. 1/2 cup
Wasabi peas 2 oz. 1/2 cup
Black sesame seeds 1 Tbsp.
White sesame seeds, toasted 1 Tbsp.
Preparation Instructions:
Step 1
Prepare the grain blend and broccoli according to package instructions. Chill.
Step 2
Whisk together coconut cream, mirin, tahini, miso, sesame oil, gochujang, red pepper flakes, and kosher salt in a small bowl until smooth. Reserve dressing.
Step 3
Combine grains, broccoli, dressing, green onions, coconut, peas and sesame seeds in a large bowl. Toss to coat.
