Preparation Instructions:
Step 1
Prepare sweet potatoes according to package instructions. Prepare quinoa according to package instructions. Chill.
Step 2
Toss together sweet potatoes, grain blend, and black beans in a bowl. Season with salt and pepper.
Step 3
For each serving, place 1 1/2 oz. lettuce in a shallow serving bowl. Top with 6 oz. sweet potato blend. Serve with 2 fl. oz. dressing on the side. Garnish with a lime wedge.
