This salad has great taste and texture. Sweet potatoes and grains are both on trend with a touch of Avocado Ranch dressing and a squeeze of lime. Yum. Don't your customers deserve a salad like this?

Ingredient Weight Measure
Simplot RoastWorks®: Roasted Sweet Potatoes 6/2.5lb 40 oz.
Simplot Good Grains™: Ancient Grains and Kale Blend 6/2.5lb 10 oz.
Black beans, canned, drained and rinsed 15.25 oz.
Salt to taste
Pepper to taste
Green leaf lettuce, chopped 15 oz.
Avocado Ranch dressing, prepared 20 fl. oz.
Lime wedges 10 wedges
Preparation Instructions:
Step 1
Prepare sweet potatoes according to package instructions. Prepare quinoa according to package instructions. Chill.
Step 2
Toss together sweet potatoes, grain blend, and black beans in a bowl. Season with salt and pepper.
Step 3
For each serving, place 1-1/2 oz. lettuce in a shallow serving bowl. Top with 6 oz. sweet potato blend. Serve with 2 fl. oz. dressing on the side. Garnish with a lime wedge.
