Preparation Instructions:
- Step 1
- Prepare sweet potatoes according to package instructions. Prepare quinoa according to package instructions. Chill.
- Step 2
- Toss together sweet potatoes, grain blend, and black beans in a bowl. Season with salt and pepper.
- Step 3
- For each serving, place 1-1/2 oz. lettuce in a shallow serving bowl. Top with 6 oz. sweet potato blend. Serve with 2 fl. oz. dressing on the side. Garnish with a lime wedge.
