This sweet and spicy fried rice features Simplot Good Grains™ Thai Style Red Quinoa & Vegetable Blend instead of rice for something delicious—and a little different.

Ingredient Weight Measure
Vegetable oil 4 fl. oz.
Chicken, uncooked, 1/2" pieces 16 oz.
Eggs, beaten 2 each
Simplot Good Grains™: Thai Style Red Quinoa & Vegetable Blend 6/2.5lb 40 oz.
Soy sauce 3 fl. oz.
Thai sweet chili sauce 6 fl. oz.
Cilantro, chopped Garnish
Limes, cut in wedges 2 each
Preparation Instructions:
Step 1
Heat 1 fl. oz. of the oil in a large wok over high heat. Add chicken and sauté until chicken is cooked through. Remove from wok and set aside. Wipe out wok.
Step 2
Heat 2 fl. oz. of the oil in wok over high heat. Add in Thai style grain blend and cook while constantly stirring. When rice is hot and has some light crispy texture, return cooked chicken and egg to pan. Add soy sauce and stir well. Add in sweet chili sauce, and stir until incorporated. Garnish with cilantro and lime wedges.
