Sweet and Spicy Mango-Corn Chutney

This delicious chutney combines sweet mango, roasted corn and peppers, and a mix of spices to create a bold and balanced condiment—ideal for grilled meats, tacos, or cheese boards.
Preparation Instructions:
Step 1
Thaw corn and peppers blend and mango according to package instructions. Dice mango.

Heat the olive oil in a medium saucepan over medium heat. Add the cumin seeds and let them sizzle for 30 seconds until aromatic. Stir in the red onion, garlic, and ginger. Sauté until softened, about 3-4 minutes. Mix in the red chilies, cinnamon, and smoked paprika. Cook for another minute to bloom the spices. Add the corn and peppers blend and mango to the pan. Stir well to combine.
Step 3
Pour in the apple cider vinegar and sprinkle the brown sugar over the mixture. Add raisins for extra sweetness. Reduce the heat to low and simmer the mixture for 15-20 minutes, stirring occasionally. Season with salt and pepper to taste. Allow mixture to thicken, and let the flavors meld together. Cool and garnish with cilantro.
