We all know that street food can be innovative, delicious and packed with flavor; these nachos are no exception.

Avocado Sauce
Ingredient Weight Measure
Cilantro leaves, cleaned 2 oz.
Habanero pepper, stemmed 1 each
Kosher salt 1 tsp.
Lime, zested and juiced 2 each
Mayonnaise 10 oz.
Simplot Harvest Fresh™ Avocados: Avocado Pulp, Frozen 12/1lb 10 oz.
Sugar 1 oz.

Simplot Harvest Fresh™ Avocados: Western Guacamole, Fresh 6/2lb 32 oz.
Simplot Select Recipe®: Sea Salt Chips, Skin On 1/8" 5 lb.
Simplot RoastWorks®: Flame-Roasted Corn & Jalapeno Blend 6/2.5lb 40 oz.
Cotija cheese, crumbled 8 oz.
Preparation Instructions:
Step 1
Thaw avocado pulp and guacamole according to package instructions.
Step 2
For guacamole; combine avocado pulp, mayonnaise, lime, habanero, cilantro, salt and sugar in a food processor and purée until smooth. Transfer to a squeeze bottle and store chilled for service.
Step 3
Prepare corn and jalapeño blend according to package instructions.
Step 4
For each serving; prepare 5 oz. of chips according to the package directions. Top with a drizzle of 1-1/2 oz. of avocado sauce, and 2-1/2 oz. corn and jalapeño blend. Sprinkle with 1/2 oz. of cheese and serve with a 2 oz. cup of guacamole.
