Want to offer a tasty snack option that will appeal to just about everyone? How about this handy kit with crispy crostini bread, creamy avocado, zesty jalapeño corn and Cotija cheese all packaged up to go?

Ingredient Weight Measure
Simplot RoastWorks®: Flame-Roasted Corn & Jalapeno Blend 6/2.5lb 1/2 cup
Baguette bread, 1/4-inch slices 4 slices
Cotija cheese, crumbled 1 Tbsp.
Tajin seasoning 1 tsp.
Simplot Harvest Fresh™ Avocados: Western Guacamole, Fresh 36/2oz 1 each
Preparation Instructions:
Step 1
Preheat oven to 350˚F.
Step 2
Prepare a foil lined sheet pan and spread corn and jalapeño blend in a single layer. Bake at 350°F oven for 8-13 minutes. Remove from oven and cool to room temperature before storing in refrigerator if not using immediately.
Step 3
Using a serrated knife cut baguette bread into 1/4-inch slices. Transfer slices to a sheet pan and bake in 350°F oven until bread is golden brown, about 5-7 minutes. Remove from oven and cool to room temperature.
Step 4
To assemble kit; portion Cotija cheese and Tajin spice into small disposable cups. In clamshell container add 4 slices crostini bread, roasted corn and jalapeño blend, 2 oz. guacamole cup, and portioned Cotija cheese and Tajin. Seal container with label or plastic wrap.
