Roasted Sweet Potatoes with Charred Churro Marshmallows

Ingredients:
1/4 tsp Cinnamon, ground
12 oz Marshmallows, large squares
40 oz Simplot RoastWorks®: Roasted Maple Sweet Potatoes 6/2.5lb
2 oz Sugar, granulated
Preparation Instructions:
• Combine sugar and cinnamon together.
• Preheat oven to 350°F. Place sweet potatoes in a baking dish that has been coated with non-stick spray. Bake for 15 minutes, rotating halfway through cook time. Add marshmallows to the top of pan and sprinkle with the cinnamon sugar. Char marshmallows under a torch, salamander or broiler until desired color is achieved, being careful not to burn.
