Hearty multi-grain orzo pasta and red quinoa combined with the Mediterranean-inspired flavors of shrimp, olive oil, lemon and creamy avocado make for a satisfying meal.

Simplot Simple Goodness™: Haricot Vert 6/2.5lb 9 oz.
Olive oil 6 fl. oz.
Lemon juice 3 fl. oz.
Water 2 fl. oz.
Salt 1/2 tsp.
Black pepper, ground 1/4 tsp.
Shrimp,16/20 count, grilled, held warm 24 each
Cherry tomatoes, halved 6 oz.
Preparation Instructions:
Step 1
Thaw avocado according to package directions.
Step 2
Prepare grain blend and haricot vert according to package directions. Chill and hold separately.
Step 3
Place avocado, olive oil, lemon juice and water in a blender. Process until smooth and creamy. Season with salt and pepper. Combine 8 fl. oz. dressing and grain blend, toss to coat. Rest for 30 minutes to allow flavors to blend.
Step 4
For each serving; place 8 oz. (1 cup) of grain blend in serving bowl. Top each with 4 shrimp, 1-1/2 oz. haricot vert, and 1 oz. tomatoes. Drizzle with 1/2 fl. oz. avocado dressing.
