This Mediterranean-inspired salad really delivers on protein and flavor—with riced cauliflower, chilled shrimp, diced vegetables, and an olive oil-lemon dressing with Sumac seasoning.
Preparation Instructions:
Step 1
Prepare riced cauliflower according to package instructions. Chill.
Step 2
In a bowl, whisk together olive oil, lemon juice and chopped mint. Season with salt and pepper. Cover and refrigerate.
Step 3
In a medium-sized bowl, add riced cauliflower, shrimp, cucumbers, red onion and tomatoes. Pour over prepared dressing and toss together until evenly combined.
Step 4
For each serving; transfer 10 oz. of prepared salad to a chilled bowl, and sprinkle with 1 oz. feta cheese and a dash of Sumac seasoning. Serve with 2 pita bread quarters.
