Perfect for any gathering or hungry crowd, this collection includes several traditional mezze appetizers, pita bread, olives, tomatoes, and dips that can be combined any-which-way. It’s easy to assemble and it travels exceptionally well.

Simplot Simple Goodness™: Whole Edamame 6/2.5lb 20 oz. 1/2 bag
Za'atar seasoning 1 1/2 Tbsp.
Simplot Good Grains™: Multi-Grain Orzo, Garbanzo & Kale Blend 6/2.5lb 20 oz. 1/2 bag
Greek salad dressing, prepared 6.3 fl. oz. 3/4 cups
Tomatoes, snacking size, color medley, halved 6 oz.
Kalamata olives, pitted halved ,drained 2.2 oz. 1/2 cup
Spanokopita, manufactured, prepared .6 oz. per 24 each
Chicken skewers, manufactured, prepared .7 oz. per 24 each
Roasted Carrot Hummus, prepared (see recipe) 8 oz.
Skordalia Sauce, prepared (see recipe) 8 oz.
Tzatziki sauce, prepared 12 oz. 1 1/2 cups
Pita bread, sliced in half, warmed 12 oz. 6 each
Preparation Instructions:
Step 1
Prepare the edamame according to package instructions. Once prepared, toss with Za'atar seasoning to coat.
Step 2
Prepare the grain blend according to package instructions. Allow to cool to room temperature or chill. In a medium bowl, mix grain blend with Greek salad dressing, tomatoes and kalamata olives.

Step 4
To assemble catering board or box, arrange items for service. Begin by placing Za'atar edamame, prepared spanakopita, chicken skewers, Roasted Carrot Hummus, Skordalia and tzatziki sauces in to-go containers or serve ware. Serve with warm pita bread.
