Mediterranean Chicken, Spinach and Feta Flatbread with Cucumber Tzatziki Avocado

Packed with Greek flavors and protein, this flatbread is on the lighter side but really satisfies. Offer it as an appetizer, shared plate, or entrée.
Preparation Instructions:
Step 1
Thaw avocado spread according to package instructions.
Step 2
In a large bowl, combine 6 fl. oz. olive oil, lemon juice, garlic and oregano. Add chicken and marinate for at least 30 minutes. Grill until cooked through, seasoning to taste. Pull into 1/2-inch pieces. Hold for service.
Step 3
Preheat oven to 450°F.
Step 4
Prepare caramelized onions according to package instructions. Hold for service. Toss the spinach leaves in 1/2 fl.oz. olive oil to coat.
Step 5
For each portion, place a flatbread on a work surface. Brush with olive oil. Top with 3 oz. caramelized onions, 1/2 cup spinach leaves, 4 oz. chicken pieces, 1 oz. sun dried tomatoes, and 2 oz. feta. Place in 450°F oven until crust is crisped and feta is slightly melted, 5-7 minutes. Remove from oven and dollop with 2 oz. avocado spread, or serve on the side for dipping. Garnish with fresh oregano. Serve immediately.
