The rich, satisfying flavor of avocado on a slice of crusty artisan bread, complemented with colorful cherry tomatoes, fresh basil and a briny olive tapenade.

Ingredient Weight Measure
Sunflower honey wheat artisan bread or similar 18 slices
Olive oil 2 fl. oz.
Simplot Harvest Fresh™ Avocados: Hand-Scooped Avocado Chunks, Fresh 8/2lb 9 oz.
Olive tapenade, prepared 4 1/2 oz.
Cherry tomatoes, halved, different varieties 18 oz.
Feta cheese, crumbled 4 oz.
Dukkah (nut and spice blend) 2 Tbsp.
Basil leaves, fresh, fried 18 each
Salt to taste
Pepper to taste
Preparation Instructions:
Step 1
For each serving; brush three slices of bread with olive oil and toast.
Step 2
Spread each slice of toasted bread with 3/4 oz. avocado, 1/2 Tbsp. tapenade, 1 oz. tomatoes, 1/2 Tbsp. feta cheese, sprinkle all with 1 tsp. dukkah and garnish each with a basil leaf. Salt and pepper as needed.
