This bowl is packed full of flavor but it won't weigh you down with heavy ingredients. A base of riced cauliflower mixed with grape tomatoes, fresh mozzarella and basil tossed with a lemon-olive oil dressing.

Ingredient Weight Measure
Simplot Simple Goodness™: Riced Cauliflower 6/2.5lb 2.5 lbs. 1 bag
Olive oil, extra virgin 1/4 cup
Lemon juice, fresh 1/4 cup
Basil leaves, fresh, chiffonade cut 1/4 cup
Red pepper flakes, crushed 1 Tbsp.
Grape tomatoes, halved 2 lbs. 1 pint
Ciliegine mozzarella cheese, halves 1 lb.
Salt to taste
Black pepper, freshly ground to taste
Preparation Instructions:
Step 1
Prepare riced cauliflower according to package instructions. Chill.
Step 2
Whisk oil, lemon juice, basil and red pepper flakes together in a bowl. Cover and refrigerate.
Step 3
In a medium-sized bowl, add cauliflower, tomatoes and cheese. Add prepared dressing, season with salt and pepper. Toss gently until all ingredients are combined. Cover and refrigerate for at least 30 minutes for flavor to develop.
