Maple Waffle Batter Bites Breakfast Hash

Preparation Instructions:
Step 1
Heat a large skillet or cast-iron pan over medium-high heat and add the chopped bacon. Cook until the bacon is crispy, then transfer it to a plate lined with paper towels to drain excess grease. Set aside.
Step 2
In the same skillet, add the vegetable oil and diced potatoes. Cook the potatoes over medium heat, stirring occasionally, until they are golden brown and crispy, about 10-12 minutes.
Step 3
Add the peppers and onions to the skillet with the potatoes. Cook for an additional 3-5 minutes, or until the vegetables are softened and slightly caramelized.
Step 4
Return the crispy bacon to the skillet and stir it into the potato mixture. Season with salt and black pepper, and add maple syrup. Cook for another 2-3 minutes to allow the flavors to meld together.
Step 5
To serve, remove the skillet from heat and transfer the breakfast hash to a serving dish. Place a serving of scrambled eggs next to hash. Garnish with optional toppings such as shredded cheese and chopped green onion.
