|24 oz.||Shrimp, 21/25, raw, peeled and deveined|
|40 oz.||Simplot RoastWorks®: Roasted Vegetables and Pasta Blend 6/2.5lb|
|16 oz.||Simplot Simple Goodness™: Asparagus, Cuts & Tips 6/40oz|
|4 fl. oz.||Lemon juice|
|4 fl. oz.||White wine|
|8 fl. oz.||Heavy cream|
|1/4 cup||Tarragon, fresh, chopped|
|1/2 tsp.||Black pepper, ground|
|2 oz.||Butter, unsalted, diced|
- Step 1
- Heat 1 fl. oz. olive oil in a large sauté pan over medium-high heat. Add shrimp and sauté until cooked through. Remove from pan and reserve. Wipe pan clean.
- Step 2
- Heat 1 fl. oz. olive oil over medium-high heat. Add pasta blend and cook until heated through. Add in asparagus and heat through. Pour in lemon juice and wine and simmer until reduced by half. Stir in cream and bring to a simmer for 2-3 minutes. Remove from heat and season with tarragon, salt and pepper. Stir in butter. Adjust seasonings.
