Preparation Instructions:
Step 1
Heat 1 fl. oz. olive oil in a large sauté pan over medium-high heat. Add shrimp and sauté until cooked through. Remove from pan and reserve. Wipe pan clean.
Step 2
Heat 1 fl. oz. olive oil over medium-high heat. Add Roasted Mediterranean Vegetable Blend and cook until heated through. Add in asparagus & pasta and heat through. Pour in lemon juice and wine and simmer until reduced by half. Stir in cream and bring to a simmer for 2-3 minutes. Remove from heat and season with tarragon, salt and pepper. Stir in butter. Adjust seasonings.
