Simplot Harvest Fresh™ Avocados: Hand-Scooped Avocado Chunks, Fresh 8/2lb 32 oz. 1 tray
Roma tomatoes, seeded, diced 6 oz.
Kalamata olives, pitted, quartered 2 oz.
Garlic, chopped 1 oz.
Basil, fresh, chiffonade 1 oz.
Capers, lightly crushed 1/2 oz.
White balsamic vinegar 1 Tbsp.
Red pepper, crushed 1 tsp.
Salt 1 tsp.
Parmesan cheese, shredded as garnish
Preparation Instructions:
Step 1
Thaw avocado according to package directions.
Step 2
In a large bowl, gently fold together avocado, tomatoes, olives, garlic, capers, vinegar, red pepper and salt. Top with parmesan and taste. Add additional salt as needed.
