Sweet and tangy roasted Fuji Apples paired with pumpkin seeds, salty prosciutto, pomegranate and savory feta cheese—all tossed together in a Dijon vinaigrette.

Kale, chopped 8.4 oz. 2 cups
Pumpkin seeds, toasted 4.25 oz. 1 cup
Prosciutto, diced 8.33 oz. 1 cup
Pomegranate seeds 5.5 oz. 1 cup
Feta cheese, crumbled 8.7 oz. 1 cup
Dijon vinaigrette, prepared 9 fl. oz.
Kosher salt .4 oz. 2 tsp.
Black pepper, ground .175 oz. 1 tsp.
Preparation Instructions:
Step 1
Thaw apples according to package instructions.
Step 2
In a large mixing bowl add apples, kale, pumpkin seeds, pomegranate and feta cheese. Stir in vinaigrette and season with salt and pepper. Let marinate for at least 30 minutes. Serve chilled.
