Fish Tacos

Fish Tacos

16 oz Simplot Harvest Fresh™ Avocados: Zesty Guacamole, Frozen 12/1lb
64 oz Halibut, or other white flesh fish
to taste Southwest seasoning
32 count Corn tortillas
8 oz Red cabbage, shredded
8 oz Green cabbage, shredded
8 oz Tomato, diced
as garnish Cilantro
as garnish Lime wedges
Preparation Instructions:
• Thaw guacamole according to package instructions.
• Season fish with the Southwest seasoning. Cook according to preference by grill, flat top, or oven. Set aside for service.
• Blend the red and green cabbages together.
• To build the tacos, heat 2 corn tortillas on a flat top grill. Place 1/2 oz of the blended cabbages in each tortilla. Top each with 2 oz cooked fish, 1/2 oz guacamole, and 1/4 oz diced tomato. Garnish with cilantro and lime wedge. Serve.
