Elote Loaded Fries
How about a big plate of delicious loaded fries? Pile up a crispy plate of fries and top with roasted corn in a tangy, spicy sauce and a big dollop of guacamole. Finish them off with cotija and cilantro and watch them disappear.

Preparation Instructions:
Step 1
Thaw guacamole and roasted corn according to package instructions.
Step 2
Whisk together 1 cup of mayonnaise, hot sauce and lime juice. Place in a squeeze bottle for service.
Step 3
In a large bowl, combine the roasted corn, 1 cup of mayonnaise, chili powder, lime juice, salt and pepper. Set aside for service.
Step 4
For each serving, prepare 8 oz. fries according to package instructions. Place in a serving dish or container. Top with 4 oz. of the prepared corn mixture and sprinkle with 1/2 oz. cotija cheese. Drizzle with 1/2 oz. of the prepared spicy mayo. Top with 2 oz. guacamole and garnish with 1 Tbsp. chopped cilantro and a lime wedge. Serve immediately.
