1 bag Simplot Simple Goodness™: Cauliflower, IQF 12/32oz
3/4 cup Ricotta cheese, part skim
1 fl. oz. Lemon juice, fresh
1 Tbsp. Lemon zest
1 tsp. Garlic, granulated
1 tsp. Salt
1/2 tsp. White pepper, ground
1 Tbsp. Thyme, fresh, stemmed
as needed Vegetable stock
Preparation Instructions:
Prepare the cauliflower according to the package directions. Combine in the bowl of a food processor; cauliflower and next 6 ingredients (Ricotta through white pepper) and process until smooth and creamy. Adjust the consistency with vegetable stock if needed. Stir in the thyme.
