Chorizo Smash Breakfast Taco

Liven up breakfast with these tasty tacos that are packed with flavor, protein, and fill you up without being heavy. A perfect way to start the day!
Preparation Instructions:
Step 1
Thaw avocado pulp according to package instructions.
Step 2
Prepare caramelized onions according to package instructions. Hold warm.
Step 3
Form ground chorizo into 2 oz. balls. Place on a griddle over medium heat. Top each ball with a tortilla and press firmly to flatten the chorizo for 10 seconds. Continue cooking 2 minutes until chorizo is cooked through, then flip over to toast the other side. Remove from griddle.
Step 4
Create circles of cheddar cheese on the griddle that match the size of the tortillas. Once the edges are set, place the prepared tortillas with the sausage on top, onto the cheese circles. Press down firmly and using a spatula, lift the entire assembly to a cutting board or taco form.
Step 5
Crack the eggs onto a greased griddle, and cook until desired doneness. Place one egg on each taco, and top with 2 oz. caramelized onions. Garnish each taco with 1 oz. guacamole and 1 tsp. cilantro. Fold tortilla and serve immediately.
