40 fl. oz. Hollandaise sauce, prepared
4 fl.oz. Aji amarillo yellow hot pepper paste
40 each Simplot Traditional: Old European Potato Pancake 6/5lb
2 1/2 lbs. Chorizo sausage, cooked and drained
10 oz. Cotija cheese, crumbled
40 each Eggs, sunny side up or poached
1/4 cup Tajin seasoning
40 each Scallions, charred
Preparation Instructions:
Whisk the pepper paste into the prepared hollandaise sauce, hold warm. For each serving; prepare 2 pancakes according to the package directions. Top each with 1 oz. of chorizo, prepared egg and 2 fl. oz. of aji amarillo hollandaise. Sprinkle with Tajin and garnish with two charred scallions.
