Step 1: Fried Onions
Ingredient Weight Measure
Onion, thinly sliced 8 oz.
Flour 4 oz.
Salt 2 tsp.
Pepper 1/2 tsp.
Step 2: Sandwich
Ingredient Weight Measure
Chicken patties, breaded, frozen (4 oz.) 16 each
Buffalo sauce 16 fl. oz.
Sandwich roll, round, split 16 each
Blue cheese, crumbled 4 oz.
Romaine lettuce leaves, trimmed 16 leaves

Preparation Instructions:
Step 1
Toss the onion with flour, salt and pepper until well coated. Deep fry the onions until crispy. Set aside.
Step 2
Cook the chicken patties according to the package instructions. Toss each patty with 1 fl. oz. of Buffalo sauce to coat well.
Step 3
Top bottom half of roll with a lettuce leaf and coated chicken patty. Add 1/4 oz. of crumbled blue cheese and 1/4 oz. of fried onion. Spread 1 oz. of guacamole on the top half of the roll and place on top of the sandwich.
