Bourbon Maple BBQ Burnt Ends

Preparation Instructions:
Step 1
In a large bowl, combine the potatoes, maple syrup, salt, and black pepper. Toss well to coat the potatoes evenly.
Step 2
In a large skillet over medium heat, add oil then pour in potatoes and cook until golden brown and crisp, approximately 8-10 minutes.
Step 3
In a skillet over medium heat, reheat the burnt ends until they are warm. Remove from the heat and set aside.
Step 4
In the same skillet as the burnt ends, add the corn and peppers. Cook for 2-3 minutes until they are heated through. Remove from heat and set aside.
Step 5
In a small saucepan, warm the BBQ sauce over low heat.
Step 6
For each serving, place a portion of the potatoes on a plate. Top with a generous amount of burnt ends, and corn and peppers. Drizzle with warm BBQ sauce and garnish with pickled red onions.
