Fries tossed in a golden curry seasoning, served with a sweet-savory mango ketchup for dipping.

Mango Ketchup

Ketchup, prepared 12 oz.
Mango chutney, prepared 16 oz.
Curried Fry Seasoning
Ingredient Weight Measure
Curry powder 2 oz.
Paprika 1 oz.
Sea salt, fine 2 oz.
Fries
Ingredient Weight Measure
Simplot Conquest®: Clear Coated Straight Cut Fries 3/8" 5 1/4 lb.
Peanut oil as needed
Preparation Instructions:
Mango Ketchup
• Whisk together the chutney and ketchup in a small bowl.
• Cover and refrigerate until ready to use.
Curried Fry Seasoning
• Blend the curry, paprika and sea salt together in a bowl.
• Pour into a shaker and reserve for service.
Fries
• Fry 12 oz of the Simplot fries according to the package directions. Remove from the fryer and drain them briefly.
• Transfer the fries to a warm stainless steel bowl, mist with peanut oil and sprinkle with the Curry Fry Seasoning. Toss to coat.
• Serve with 4 oz of the Mango Ketchup.
