Bagel Breakfast Sandwich

A warm, satisfying breakfast sandwich with sausage, egg, cheese and avocado—a tasty, balanced morning meal that provides all the energy needed for a productive day of learning.
Preparation Instructions:
Step 1
The day before service, thaw avocado spread under refrigeration overnight. When thawed, portion 2 Tbsp. of avocado spread using a #30 disher into ivex containers.
Step 2
Preheat convection oven to 375°F.
Step 3
Prepare sausage patties. Heat in oven 12-14 minutes.
Step 4
Prepare egg patties. Place in single layer of egg patties in an ungreased, full-size steamer pan; do not cover. Steam 5-7 minutes.
Step 5
Assemble sandwiches. Split bagel open and place 1 cheese slice, 1 egg patty, and 1 sausage patty on bottom half.
Step 6
To serve as grab and go, top sausage with top half of bagel and place sandwiches in paper sleeves. Shingle sandwiches in steam table pan and hold in warmer until ready for service. Serve with pre-portioned avocado spread in a boat.
