Preparation Instructions:
Step 1
Heat oil in 3-quart sauce pan over medium heat. Add ginger, garlic and peppers and cook until fragrant and a little crisp, about 3 minutes. Pour in broth and bring to a boil. Stir in Cilantro Lime Rice and Fire Roasted Corn Fiesta, return to a boil. Reduce heat and simmer 5 minutes. Turn off heat and stir in fish sauce. Season with salt to taste.
Step 2
For each serving, portion 8 fl. oz. arroz caldo into a warm bowl. Halve a hardboiled egg and place both halves on top of the rice. Garnish with 1/4 oz. crispy onions, 1 lime wedge and cilantro leaves.
