Preparation Instructions:
Step 1
Preheat oven to 400˚F.
Step 2
Dice roasted apples and combine with raisins and walnuts. Reserve.
Step 3
For each strudel, roll out a puff pastry sheet until about 1/3 larger in size. Place half the apple filling down center length of dough, leaving 2 inches uncovered pastry on side and 1 inch on the top and bottom. Lift the sides over the apples and roll to form the bottom of the strudel. Pinch side edge seams of dough to seal. Place strudels, seam side down, on parchment-lined sheet pans.
Step 4
Whisk together egg and water, brush onto strudels and sprinkle with sugar. Cut several decorative slits in the top of each strudel. Bake at 400˚F for 30-35 minutes until golden brown and cooked through. Let rest 20 minutes before slicing.
