Seekh Kebab French Taco
Yield: 6 Raciones (1 taco each)
Yield: 6 Raciones (1 taco each)
French tacos are more like a grilled burrito than a traditional taco. This version includes perfectly seasoned grilled lamb, crispy fries, and peppers and onions wrapped in pliable lavash bread that's grilled until crispy. Served with two house-made sauces, these make for a tasty portable meal or snack!
Preparation Instructions:
Step 1
Preheat combi oven to 425°F, full fan.
Step 2
In a large bowl, combine all kebab ingredients and allow to rest for at least 30 minutes. Form mixture into kebab shapes and place on sheet tray. Roast in oven for 7-9 minutes or until internal temperature reaches 165°F. These can be cooked in advance and reheated for service.
Step 3
To prepare the Harissa Butter Sauce, sauté onion with vegetable oil over medium-high heat until translucent. Add tomato paste, brown sugar, ginger, and yellow curry to the pan, stir and sauté for 2-3 minutes. When mixture is fragrant and combined, add butter, heavy cream and harrisa. Reduce heat and allow to simmer for 5 minutes. Add mixture to high-powered blender with roasted garlic and salt, blend until smooth.
To prepare the Cilantro Mint Chutney, add the first 9 ingredients (cilantro through sugar) to blender. Begin to blend and add water in small amounts until ingredients start to blend together and the mixture comes to desired consistency. Chutney can be made completely smooth or left in a pulsed, rough-chopped form.
Step 4
Prepare peppers and onions according to package instructions. Prepare fries to according package instructions.
Step 5
To assemble, spread labneh in middle center section of each lavash bread followed by lamb kebabs, peppers and onions, fries, and harissa sauce. Fold into “burrito” with one open end. Sear on flat top or grill to seal folded side, followed by searing or grilling the presentation side for color. Serve with a side of Cilantro Mint Chutney.
