Plant-Based Loaded Fries with Cashew Nacho Cheese

Step 1

Thaw avocado according to package instructions.

Step 2

Prepare caramelized-style onions according to package instructions.

Step 3

Prepare Cashew Nacho Cheese and Corn and Jalapeño Salsa and place in separate containers for service.

To prepare the Cashew Nacho Cheese, soak cashews in bowl of warm water for 30 minutes. Drain cashews and add to a high-powered blender with all ingredients. Blend until smooth. Season with extra salt if needed.

To prepare the Corn and Jalapeño Salsa, prepare the corn & jalapeño blend according to package instructions. Allow to cool. Add water to a pot and add sugar, cumin, and coriander. Bring to a boil ensuring sugar is dissolved. Make slurry with cornstarch and additional water. Add the slurry a little at a time to water, sugar and spice mix until you see the liquid start to thicken. Remove from heat and allow to cool. Combine corn mixture, sauce, and all other ingredients, mix well. Refrigerate before service to allow flavors to come together.

Step 4

Prepare fries according to package instructions. Season with salt to taste.

Step 5

For each serving, place fries on serving dish. Drizzle cashew queso over fries, add corn salsa, caramelized onions, dollops of avocado spread, tomato, and garnish with green onions.
