Indian Broccoli and Chickpea Dal

Indian Broccoli

1 fl oz Olive oil
40 oz Simplot Good Grains™: Couscous, Red Quinoa and Vegetable Blend 6/2.5lb
15 oz Chickpeas, drained
4 oz Simplot Simple Goodness™: Pearl Onions IQF 12/40oz
8 oz Simplot Simple Goodness™: Broccoli Florets, IQF 12/32oz
6 fl oz Vegetable broth
1 tbsp Serrano chili, minced
2 tsp Turmeric, ground
2 tsp Cumin, ground
2 tsp Salt, coarse
1 tsp Mustard seed
2 tbsp Green onion, sliced
Preparation Instructions:
• Heat olive oil in a large non-stick skillet over medium-high heat, add Cous-Cous Red Quinoa & Vegetable Blend, pearl onions and broccoli. Cook until warmed through.
• Add in chickpeas. Cook until hot.
• Pour in vegetable broth to deglaze pan and gain thick viscosity.
• Add in chilis and spices. Simmer until flavors bloom. Adjust seasoning. Garnish with green onion and serve.
