Buffalo Veg loaded sidewinders

Ingredients:
6 oz Simplot RoastWorks®: Flame-Roasted Corn and Black Bean Fiesta Blend 6/2.5lb
4 oz Pico de gallo
16 oz Simplot RoastWorks®: Roasted Mediterranean Vegetable Blend 6/2.5lb
6 fl oz Buffalo Sauce
2 lb Simplot SIDEWINDERS™ Fries: Beer-battered SIDEWINDERS™ Fries, Skin On 8 Cut
8 oz Land o’ Lakes White Queso Sauce, warmed
3 oz Sour cream (thinned with 1 fl.oz. water)
2 oz Scallions, sliced
Preparation Instructions:
• Prepare Simplot RoastWorks® Corn and Black Bean Fiesta according to package instructions. Allow to cool. Combine with pico de gallo. Reserve.
• Cook Simplot Mediterranean blend according to package instructions. Toss with Buffalo sauce. Keep warm
• Prepare SIDEWINDERS™ Fries. Drain well and place onto serving platter. Scatter sauced Mediterranean blend on top of SIDEWINDERS™.
• Pour cheese sauce evenly over fries and vegetables. Sprinkle with corn blend.
• Drizzle with thinned sour cream and garnish with sliced scallions. Serve
