The Secret Ingredient: Avocado

Avocado has well and truly smashed its way into Australians’ hearts and stomachs, with diners and chefs alike recognising its superhero ability to transform both sweet and savoury dishes. From the classic guacamole to creamy salad dressings, decadent smoothies, dips, dressings, sauces and even desserts and fat substitutes, the humble avocado with its dense nutritional profile is a versatile ingredient for any kitchen.

They can be mashed, sliced, diced, pureed, or used as a garnish.

With the rise in demand for plant-based meals, avocado can star as a delicious butter substitute. They are also naturally gluten-free. Any downsides, namely that avocados can quickly overripe and spoil, requiring careful storage and timely consumption to avoid the cost and waste of spoiled produce, can be easily overcome by using frozen avocado pulp.

Frozen avocados not only retain much of their nutritional value but are a huge timesaver, negating the need to peel, pit, and mash the fruit before using.

HOW WE ENJOY AVOCADO ...

Guacamole

Guacamole is a classic for a reason, what could be easier or more satisfying than mashing ripe avocados, adding chopped tomatoes, onions, lime juice, coriander, and a hint of salt and pepper?

Salad dressing

Blend ripe avocado with olive oil, lemon juice, garlic, and your favourite herbs to create a smooth and creamy salad dressing that you can drizzle it over fresh greens or use as a dip.

Smashed avo

Avocado on toast – do we need to say more? Possibly the simplest and most delicious breakfast to add to your menu. Add a sprinkle of salt and pepper, cherry tomatoes, feta cheese, spinach leaves and red pepper flakes, or a drizzle of balsamic glaze for a classic all-day breakfast.

Creamy smoothies

The addition of avocado can elevate a smoothie from a tasty drink to a satisfying meal thanks to its creamy texture and healthy fats. Throw in a banana, berries, spinach, and coconut water for a thick drink that will power you for hours.

Delicious desserts

Surprise – with its mild flavour, avocado can be the creamy star of vegan desserts, including this delicious, easy to make creamy avocado and peanut butter flavoured pudding.

Chocolate Peanut Butter Avocado Pudding

SERVES 4 Ingredients:

  • 454g tub frozen Edgell Chunky Avocado Pulp, thawed

  • 60g smooth or crunchy peanut butter

  • 30g cocoa powder

  • 30g honey

  • 20ml milk, optional

  • Fresh berries and mint, for serving

Method:

  1. Blend Edgell Avocado, peanut butter, cocoa powder and honey in a food processor until smooth. Add milk to adjust consistency, if required.

  2. Portion into serving dishes, cover and refrigerate for 3 hours.

  3. Serve garnished with fresh berries and mint.
