Spicy Broccoli And Tofu Soup

A light and flavour-packed Asian soup with broccoli, tofu and rice noodles.
Instructions:
Step 1
Combine lime juice and soy sauce. Add tofu to marinate.
Step 2
Sauté spring onions and garlic. Add water and stock and bring to the boil. Add noodles and cook until tender.
Step 3
Add tofu and any remaining marinade, chilli flakes, frozen Edgell Broccoli and frozen Edgell Carrot. Return to boil. Serve with bean shoots, peanuts and deep fried enoki mushrooms.
