Guinness Beef And Colcannon Cottage Pie

The ultimate gaelic pairing! Colcannon topping a Guinness pie.
Instructions:
Step 1
Brown beef and place in deep sided gastronorm.
Step 2
Sauté mushrooms and shallots and add to beef. Repeat with speck and garlic.
Step 3
Add Guinness, stock, Leggo’s Tomato Paste, thyme and bay leaves. Place in a commercial fan forced oven on low heat until tender.
Step 4
Sauté cabbage in butter. Prepare Edgell Mash Potato following packet directions. Mix with cabbage.
Step 5
Divide beef between serving dishes and quenelle colcannon mash on top before serving.
