Coddled Egg With Mash

Eggs baked in mashed potato and served with Turkish bread.
Instructions:
1. Prepare Edgell Mash Potato following packet instructions.
2. Place 50g of mash into the bottom of a 1 cup capacity jar.
3. Crack an egg onto the mash and screw the lid on until finger tight.
4. Cook in a combi oven set to steam at 67°C for 40 minutes.
5. Sprinkle with chives. Serve with toasted Turkish bread.
