Cheesy Avocado Croquettes
Crispy and flaky on the outside, soft and oh–so–satisfying on the inside. Try making these delicious potato and avocado patties fried to golden perfection, perfect for a filling snack!
Preparation Instructions:
Step 1
Thaw Simplot Harvest Fresh Avocados: Avocado Pulp according to package instructions. Set aside.
Step 2
Cut potatoes into smaller chunks. Bring a pot of water to a boil and cook potatoes until soft. Drain excess water and mash them with a fork while they’re hot. Cool completely.
Step 3
Combine potatoes and avocados. Season with salt and pepper. Mix well.
Step 4
Using clean hands, flatten the mixture into about 6 equal portions. Press about a tablespoon of shredded cheese into their centers. Mold them into patties.
Step 5
Coat each patty with flour, dip them in beaten egg, then finally cover them in breadcrumbs. Set aside to chill in the fridge for about 30 minutes.
Step 6
Once set, deep fry them in oil until golden brown. Serve immediately. Enjoy!
