Avocado Egg Rolls
Jump into the mood for all things Lunar New Year with these egg rolls fried to golden perfection! Filled with creamy, savory avocado and wrapped in a crispy shell–perfect to share during the grand reunion feast.
Preparation Instructions:
Step 1
Thaw Simplot Harvest Fresh Avocados: Avocado Pulp according to package instructions.
Step 2
In a mixing bowl, combine avocado pulp, onion, tomato, cilantro, and lime juice—season with salt, pepper, and garlic powder to taste.
Step 3
To assemble the egg rolls: Lay a piece of an egg roll wrapper on a clean surface. Place the avocado mixture in the center. Using a clean finger, rub the edges lightly with water. Bring the bottom edge of the wrapper up and roll the filling tightly. Bring the side edges to the center, then, continue rolling up the filling. Press to seal. Repeat with the rest of the wrappers.
Step 4
In the meantime, heat some frying oil over medium-high heat. Fry egg rolls until golden brown on all sides for about 2-3 minutes. Remove from the oil and let them cool on a towel-lined plate. Serve immediately. Enjoy!
