Preparation Instructions:
Step 1
For the Avocado and Tomato Antipasto; mix all the ingredients together and store in chiller.
Step 2
Heat a saucepan and drizzle with olive oil. Seasoned the chicken breast with basil oil, salt and pepper.
Step 3
Grill or pan-fry chicken breast till well cooked.
Step 4
Place the grilled chicken on a plate and top with tangy avocado and tomato antipasto. Serve with toasted garlic bread.
