Fried Spicy Wedges With Spiced Anchovies
Inspired by Minang-style cuisine, this is a well-known dish found in Malaysia and Singapore. You don’t need fancy ingredients to make this, and it comes together quickly with Simplot potato wedges!
Preparation Instructions:
Step 1
Heat oil in a saucepan until boiling and fry the anchovies and potato wedges together until crisp. Drain the oil, then set it aside. If you have an air fryer, you may air-fry the anchovies for 5-8 minutes at 360°F/180°C. For Simplot potato wedges, it will need 10-15 minutes at the same temperature. Make sure you shake the air-fryer basket in between to ensure they are evenly cooked.
Step 2
In the same pan, reduce a little oil and stir-fry the onion, garlic, red chilies, and shrimp paste for 1-2 minutes.
Step 3
Next, add the potato wedges and anchovies into the saucepan. Add salt and sugar to taste.
Step 4
Then, add the sliced chilli padi and stir-fry it for another one minute. Sedia untuk dihidang (ready to dig in)!
