Chewy Avocado Chocolate Chip Cookies

Comfort chocolate chip cookies, but better and rich in that irresistible avocado flavor.
Preparation Instructions:
Step 1
Thaw avocado pulp according to package instructions. Set aside.
Step 2
Preheat oven to 160˚C.
Step 3
Combine flour, cornstarch, salt, and baking soda in a bowl. Set aside.
Step 4
In a separate and larger bowl, beat together avocado, vanilla, eggs, and egg yolk until the mixture is smooth and lump-free. Add sugar and stir to combine.
Step 5
Fold in the dry mixture into the wet. Stir until well combined.
Step 6
Mix in the chocolate chips evenly. Cover the bowl with plastic wrap and allow to chill in the fridge for at least 30 minutes.
Step 7
Scoop out cookie dough into medium-sized balls and place them on a lined baking tray. Press them out to about 1/2-inch thickness.
Step 8
Bake for 12 minutes, and let them cool on the baking tray completely outside. Serve with cold milk. Enjoy!
